Instant Pot Red Lentil Soup

A delicious and comforting red lentil soup made in the Instant Pot in less than 30 minutes.

Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Turn on the Instant Pot to sauté mode. Add olive oil and sauté onions, carrots, and celery until softened.
  2. Add garlic, cumin, turmeric, and black pepper; stir for 1 minute.
  3. Add red lentils and vegetable broth. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 10 minutes. Once done, let it naturally release for 10 minutes before quick releasing the remaining pressure.
  5. Stir in lemon juice and season with salt to taste.

Notes

  • Can be stored in the refrigerator for up to 5 days.
  • Freezes well for up to 3 months.
