Instant Pot Lasagna Soup

This Instant Pot Lasagna Soup is a delicious and comforting meal that’s easy to make, featuring turkey bacon for a healthier twist.

  • 1 pound turkey bacon
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 12 ounces lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated

Instructions

  1. Set the Instant Pot to sauté mode and cook the turkey bacon until crispy. Remove and chop.
  2. Add onion and garlic to the pot, sauté until translucent.
  3. Stir in crushed tomatoes, chicken broth, and Italian seasoning.
  4. Break the lasagna noodles and add them to the pot.
  5. Close the lid, set to manual pressure for 6 minutes.
  6. Quick release the pressure and stir in the ricotta, mozzarella, and Parmesan cheeses until melted.

Notes

  • This soup can be made with ground turkey or chicken if preferred.
  • For extra flavor, add fresh basil before serving.
