Instant Pot Creamy Wild Rice & Mushroom Soup

Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 cup chopped mushrooms
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add onions and garlic, and cook until translucent.
  3. Stir in the mushrooms, and cook until softened.
  4. Add wild rice, vegetable broth, thyme, salt, and pepper.
  5. Close the lid, set to high pressure for 30 minutes.
  6. Once done, release the pressure, stir in coconut milk, and serve hot.

Notes

  • For added flavor, you can include grated parmesan cheese before serving.
  • Feel free to adjust the seasoning as needed.
