  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Add baking soda and salt. Mix well.
  5. Stir in sugar, egg, and vanilla extract.
  6. Add the flour and mix until just combined.
  7. In a separate bowl, mix cinnamon and brown sugar.
  8. Pour half of the banana bread mix into a greased loaf pan, sprinkle half of the cinnamon mixture on top, then add the remaining batter and top with the rest of the cinnamon mixture.
  9. Swirl the mixture with a knife.
  10. Bake for 50-60 minutes or until a toothpick comes out clean.
  11. Let cool for 10 minutes before transferring to a wire rack.
