Homemade Chicken Noodle Soup

Ingredients

  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery; sauté until softened.
  2. Add the garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded chicken, thyme, and parsley. Reduce heat and let simmer for 10 minutes.
  5. Add the egg noodles and cook for another 8-10 minutes until the noodles are tender.
  6. Season with salt and pepper to taste before serving.
