  • 1/2 cup cooked sausage, crumbled
  • 2 eggs
  • 1 cup milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, mix the pancake mix, crumbled sausage, eggs, milk, maple syrup, and vanilla extract until well combined.
  3. Pour the mixture into the mini muffin tin, filling each cup about 2/3 full.
  4. Bake for 15-18 minutes or until a toothpick comes out clean.
  5. Allow the muffins to cool for a few minutes before removing from the tin.
