  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil, honey, eggs, and vanilla extract.
  4. In another bowl, mix baking soda, salt, and flour.
  5. Combine both mixtures and fold in the oats.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let it cool before slicing.

  • This banana bread can be stored at room temperature for up to 3 days.
