Healing Warming Soup

A delicious and nourishing soup that combines turkey bacon and a variety of vegetables.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup diced potatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add carrots, celery, and potatoes to the pot and sauté for a few minutes.
  3. Pour in the vegetable broth and add thyme and garlic powder.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the chopped turkey bacon back to the pot, season with salt and pepper, and serve hot.

Notes

  • Feel free to add any other vegetables you like.
  • This soup can be made in advance and tastes even better the next day.
