- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tablespoon olive oil
- Set the Instant Pot to sauté mode. Add olive oil and sauté onions and garlic until translucent.
- Add the chicken breasts, carrots, celery, chicken broth, thyme, bay leaf, salt, and pepper.
- Seal the Instant Pot and cook on high pressure for 15 minutes.
- Once done, release pressure and remove the chicken. Shred it and return to the pot.
- Stir well and serve hot.
Notes
- For more flavor, add fresh herbs like parsley before serving.
- You can substitute chicken breasts with thighs for richer taste.
