  • 1 cup zucchini, sliced
  • 1 cup red onion, cubed
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, garlic, salt, pepper, and Italian seasoning.
  3. Add the vegetables to the bowl and toss to coat evenly.
  4. Thread the vegetables onto skewers.
  5. Place skewers on the grill and cook for about 10-15 minutes, turning occasionally.
