Grilled Corn Salad

Ingredients

  • 4 ears corn, husked
  • 5 strips turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally until charred.
  3. In a skillet, cook the turkey bacon until crispy, then allow to cool and crumble.
  4. Once the corn is grilled, let it cool, then slice the kernels off the cob.
  5. In a large bowl, combine the grilled corn, crumbled turkey bacon, cherry tomatoes, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.
  7. Serve immediately or refrigerate until ready to serve.

Notes

  • For added flavor, you can include avocado or feta cheese.
  • Best served fresh but can be stored in the fridge for up to 3 days.
