- 2 pounds Yukon gold potatoes
- 8 slices turkey bacon
- 2 cups heavy cream
- 1 cup shredded Gruyère cheese
- 1 cup shredded cheddar cheese
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh thyme, chopped
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a saucepan, combine heavy cream, garlic, salt, pepper, and thyme. Heat gently.
- Slice the potatoes thinly and layer half in a greased baking dish. Sprinkle with half the cheeses and half the bacon.
- Pour half the cream mixture over the layers. Repeat with remaining potatoes, cheeses, and bacon.
- Finish with the remaining cream on top, and cover with foil.
- Bake for 45 minutes, then remove foil and bake for an additional 15-20 minutes until golden.
Notes
- Let the dish rest for 10 minutes before serving to allow it to set.
- For more flavor, add chopped onions in between layers.
