Gingerbread S'mores Cookies

Gingerbread S’mores Cookies bring together the warm flavors of gingerbread with the deliciousness of s’mores, making them a perfect holiday treat.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup milk chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the molasses and mix well.
  4. In another bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

  • For added flavor, drizzle melted chocolate on top of the cooled cookies.
  • These cookies can be made ahead of time and stored for later enjoyment.
