This delicious Enchilada Casserole is made with turkey bacon and chicken ham, offering a unique twist on a classic dish.

Ingredients

  • 1 pound turkey bacon
  • 2 cups cooked chicken ham, shredded
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 corn tortillas, cut into strips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove and chop.
  3. In the same skillet, add diced onion and garlic, sauté until softened.
  4. Add the shredded chicken ham, black beans, corn, and half the enchilada sauce. Stir to combine.
  5. In a baking dish, layer half of the tortilla strips, half of the meat mixture, and half of the cheese. Repeat the layers.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  8. Let cool for a few minutes before serving.
