Egg Salad Sandwiches + Carrot Sticks

This recipe for egg salad sandwiches and carrot sticks is perfect for healthy snacking.

Ingredients

  • 4 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices of whole grain bread
  • 4 leaf romaine lettuce
  • 2 large carrots, cut into sticks

Instructions

  1. Hard boil the eggs in a pot of water for about 10 minutes. Remove from heat and cool.
  2. Peel the eggs and chop them into small pieces.
  3. In a bowl, mix the chopped eggs, mayonnaise, Dijon mustard, salt, and pepper.
  4. Spread the egg salad mixture onto 4 slices of bread and top with lettuce.
  5. Place another slice of bread on top to make sandwiches.
  6. Serve with carrot sticks on the side.
