1 pound shrimp, peeled and deveined
1 cup fresh lime juice
1/2 cup red onion, finely diced
1 jalapeño, seeded and minced
2 tomatoes, diced
1/2 cup cilantro, chopped
1 avocado, diced
Salt to taste
Instructions
In a large bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged in the juice. Cover and refrigerate for about 2 hours, or until the shrimp are opaque.
Add the diced red onion, jalapeño, tomatoes, and cilantro to the bowl with the shrimp. Mix well to combine.
Just before serving, gently fold in the diced avocado and season with salt to taste.
Notes
For a milder ceviche, use less jalapeño or remove the seeds completely.
Serve with tortilla chips or on its own as a refreshing appetizer.
