Easy Lasagna Soup No Ricotta

  • 8 ounces turkey bacon
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 ounces lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add ground turkey to the pot and cook until browned.
  3. Stir in chopped onion and minced garlic, cooking until softened.
  4. Add crushed tomatoes, chicken broth, Italian herbs, salt, and pepper. Bring to a boil.
  5. Once boiling, add broken lasagna noodles. Reduce heat and simmer until noodles are cooked.
  6. Serve hot, topped with mozzarella cheese and fresh basil.

Notes
