  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, cook ground turkey, onion, and garlic until browned.
  3. Add crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Break lasagna noodles into smaller pieces and add to the pot.
  5. Simmer until noodles are tender, about 10-12 minutes.
  6. Stir in ricotta cheese and allow to melt.
  7. Serve topped with shredded mozzarella, Parmesan, and crumbled turkey bacon.

Notes

  • This soup can easily be made ahead of time and reheated.
  • For a vegetarian option, substitute ground turkey with lentils or mushrooms.
