  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil

Instructions

  1. Flatten the chicken breasts between two pieces of plastic wrap until about 1/2 inch thick.
  2. Set up a dredging station with flour, beaten eggs, and a mixture of breadcrumbs, cheese, parsley, salt, pepper, and garlic powder.
  3. Dip each chicken breast in flour, then the egg, and finally the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Fry the chicken cutlets for about 4-5 minutes on each side or until golden brown and cooked through.
  6. Remove and place on a paper towel-lined plate to absorb excess oil.
  7. Serve hot with a sprinkle of fresh parsley if desired.

Notes

  • For extra flavor, marinate the chicken in Italian dressing for a few hours before cooking.
  • These can also be baked in the oven at 400°F for 20-25 minutes as a healthier option.
