Easy Green Chicken Enchiladas

  • 2 cups shredded cooked chicken
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, green enchilada sauce, half of the cheese, onion, cilantro, cumin, and salt.
  3. Wrap the filling in tortillas and place them in a baking dish.
  4. Pour remaining enchilada sauce over the tortillas and top with remaining cheese.
  5. Bake for 20 minutes or until cheese is bubbly.
