Easy Chicken and Rice Soup

A delicious and comforting chicken and rice soup with the added flavor of turkey bacon.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup turkey bacon, chopped
  • 1 cup rice, uncooked
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery; sauté until softened.
  3. Add garlic and cook for another minute.
  4. Stir in chicken broth and bring to a boil.
  5. Add rice and cook according to package instructions.
  6. Once rice is cooked, add shredded chicken and cooked turkey bacon back to the pot.
  7. Season with thyme, parsley, salt, and pepper.
  8. Serve hot and enjoy!

Notes

  • For a richer flavor, consider using homemade chicken broth.
  • Add more vegetables like peas or corn for extra nutrition.
