Easy Cheesy Ground Beef Enchiladas

Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas
  • 1 can enchilada sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until browned.
  3. Stir in garlic powder, cumin, chili powder, and salt, and cook for another 2 minutes.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them up.
  6. Place the rolled enchiladas seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  8. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • For a spicier version, add diced jalapeños to the beef mixture.
  • Top with sour cream and avocado for extra flavor.
