  • 1 cup peeled and diced apples
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, diced apples, eggs, vegetable oil, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, baking soda, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
  6. In a small bowl, mix together the brown sugar, oats, and chopped nuts. Sprinkle this mixture over the muffins.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
