  • 4 cups cooked rice
  • 1 pound chicken thighs
  • 1 cup tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, layer the cooked rice evenly.
  3. Place the chicken thighs on top of the rice.
  4. Spread the tzatziki sauce over the chicken and season with garlic powder, oregano, salt, and pepper.
  5. Add the cherry tomatoes around the chicken.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes or until the chicken is fully cooked.
  8. Garnish with fresh parsley before serving.
