  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 can (14 ounces) coconut milk
  • 4 cups chicken broth
  • 2 cups bell peppers, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 cup snap peas
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in the crockpot and add chicken thighs, browning them for a few minutes.
  2. Add coconut milk, chicken broth, bell peppers, onion, garlic, ginger, red curry paste, and fish sauce.
  3. Cook on low for 6-7 hours or until chicken is tender.
  4. Shred the chicken and stir back into the soup.
  5. Stir in lime juice and snap peas, cooking for an additional 15 minutes.
  6. Garnish with fresh cilantro before serving.
