Crockpot Potato Soup

A deliciously creamy potato soup made in a crockpot, perfect for a comforting meal.

Ingredients

  • 5 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a crockpot, combine the diced potatoes, chopped onion, chicken broth, garlic, salt, pepper, and thyme.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. Use a potato masher to mash the potatoes to your desired consistency.
  4. Stir in the heavy cream and crumbled turkey bacon, and cook for an additional 30 minutes.
  5. Serve hot, garnished with additional bacon if desired.

Notes

  • For extra creaminess, blend a portion of the soup and then mix it back in.
  • Consider adding shredded cheese on top before serving.
