Ingredients

  • 6 medium potatoes, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped

Instructions

  1. Place diced potatoes and onion in the crock pot.
  2. Add the chicken broth, garlic powder, salt, and pepper.
  3. Cook on high for 4 hours or low for 8 hours until the potatoes are tender.
  4. Using a potato masher, mash some of the potatoes for a creamy texture.
  5. Stir in heavy cream, cheddar cheese, and bacon bits.
  6. Cook for an additional 30 minutes until the cheese is melted.
  7. Garnish with green onions before serving.

Notes

  • For an extra kick, add some crushed red pepper flakes.
  • This soup is great for meal prep and can be stored in the refrigerator.
