Creamy Spinach Tortellini Soup

A rich and flavorful creamy spinach tortellini soup with the delightful addition of turkey bacon.

Ingredients

  • 8 ounces cheese tortellini
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the chicken broth and bring to a boil.
  4. Stir in the tortellini and cook according to package directions.
  5. Reduce heat and stir in the heavy cream, spinach, Italian seasoning, and bacon. Season with salt and pepper.
  6. Simmer for an additional 5 minutes before serving.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • Top with grated parmesan cheese for extra flavor.
