Creamy Potato Soup

This creamy potato soup with turkey bacon is the perfect comfort food to warm you up.

Ingredients

  • 4 large potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sauté until translucent.
  3. Peel and cube the potatoes, then add them to the pot.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
  5. Add heavy cream and thyme, stirring until combined.
  6. Blend the soup to desired creaminess with an immersion blender.
  7. Season with salt and pepper, and top with turkey bacon before serving.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Can substitute regular bacon if preferred.
