  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lemon, zested and juiced
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for an additional 1 minute.
  3. Stir in the chicken broth and bring to a boil.
  4. Add the chicken breasts and orzo. Reduce heat and simmer until the chicken is cooked through and orzo is tender, about 10-12 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the heavy cream, lemon zest, and lemon juice. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
