  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 2 cups spinach, fresh
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large bowl, combine ground beef, onion, garlic, Italian seasoning, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until well combined.
  2. Form mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, bring the chicken broth to a simmer.
  4. Add the meatballs and cook for about 10 minutes.
  5. Stir in the diced tomatoes and heavy cream. Simmer for another 10 minutes.
  6. Add the fresh spinach just before serving.
  7. Season with additional salt and pepper if needed.
