Creamy Green Enchiladas Chicken Soup

  • 2 cups cooked, shredded chicken
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup green enchilada sauce
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn, frozen or fresh
  • 1 cup black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and sauté for another minute.
  3. Stir in the chicken broth and green enchilada sauce.
  4. Add the shredded chicken, corn, black beans, cumin, chili powder, salt, and black pepper. Bring to a simmer.
  5. Reduce heat to low and stir in the heavy cream. Cook for an additional 5 minutes.
  6. Adjust seasoning as necessary and stir in fresh cilantro before serving.

Notes

  • For extra creaminess, you can add more heavy cream or a dollop of sour cream when serving.
  • Top with shredded cheese or avocado for added flavor.
