  • 1 pound boneless chicken breasts
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1/2 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons flour

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add diced chicken and cook until browned.
  3. Add carrots, celery, and potatoes, cooking for about 5 minutes.
  4. Stir in the flour, coating the veggies and chicken.
  5. Slowly pour in the chicken broth while stirring.
  6. Add the heavy cream, thyme, frozen peas, salt, and pepper.
  7. Let the soup simmer for 15-20 minutes until the vegetables are tender.
  8. Serve hot, topped with crumbled turkey bacon.

Notes

  • Feel free to substitute with your favorite vegetables.
  • For a lighter version, use half-and-half instead of heavy cream.
