8 ounces fettuccine pasta
1 pound boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup diced tomatoes
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Instructions
Cook the fettuccine according to package instructions. Drain and set aside.
Season the chicken breasts with Cajun seasoning.
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until no longer pink in the center, about 6-7 minutes per side. Remove from the skillet and let rest before slicing.
In the same skillet, add minced garlic and sauté for 1 minute.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and diced tomatoes, cooking for about 3-4 minutes until slightly thickened.
Add the cooked fettuccine and sliced chicken back to the skillet, tossing to combine.
Garnish with fresh parsley and season with salt and pepper to taste. Serve hot.
Notes
For a spicier dish, use more Cajun seasoning.
This recipe is easily adaptable; feel free to add vegetables such as bell peppers or spinach.
