Creamy Broccoli Tortellini Soup

Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 6 cups vegetable broth
  • 1 package (9 oz) cheese tortellini
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onions are translucent.
  2. Add broccoli florets and vegetable broth, bring to a boil. Reduce heat and simmer for 10 minutes.
  3. Stir in cheese tortellini and cook according to package instructions.
  4. Reduce heat, stir in heavy cream, and season with salt and pepper. Heat through.
  5. Serve warm, garnished with additional black pepper if desired.

Notes

  • Feel free to add other vegetables to the soup.
  • For a vegan version, substitute heavy cream with coconut cream.
