Cream of Mushroom Soup

This creamy and indulgent soup, made with turkey bacon and fresh mushrooms, is perfect for cozy nights in.

Ingredients

  • 4 cups sliced mushrooms
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
  2. Add onions and garlic to the pot and sauté until soft.
  3. Add mushrooms and cook until they release their moisture.
  4. Sprinkle flour over the mixture and stir for one minute.
  5. Slowly add chicken broth while stirring, then bring to a simmer.
  6. Stir in heavy cream and thyme. Season with salt and pepper.
  7. Add chopped turkey bacon back to the pot and heat through.
  8. Serve warm and enjoy!

Notes

  • This soup freezes well for up to three months.
  • For a vegan option, substitute turkey bacon with smoked tempeh and use coconut milk.
