Cream of Mushroom Soup

A delicious and easy cream of mushroom soup with turkey bacon that will warm your heart.

Ingredients

  • 4 cups sliced mushrooms
  • 4 strips turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and crumble.
  2. Add olive oil to the bacon drippings and sauté onions and garlic until translucent.
  3. Stir in mushrooms and cook until tender.
  4. Add chicken broth and thyme, then bring to a boil.
  5. Reduce heat and stir in heavy cream. Simmer for 10 minutes.
  6. Season with salt and pepper, then top with crumbled bacon before serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Can be frozen for up to three months.
