  • 8 ounces ricotta cheese
  • 8 ounces dark chocolate, chopped
  • 1 cup cocoa powder
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Melt the chocolate in a double boiler until smooth.
  2. In a bowl, combine ricotta cheese, melted chocolate, powdered sugar, vanilla extract, and salt.
  3. Mix until all ingredients are well incorporated.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Once chilled, scoop out the mixture and roll it into balls.
  6. Roll the truffles in cocoa powder to coat.
  7. Place on a baking sheet and chill again before serving.

Notes

  • These truffles can be made a day in advance.
  • Feel free to add chopped nuts for extra texture.
