- 8 ounces dark chocolate, chopped
- 1 cup cocoa powder
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Melt the chocolate in a double boiler until smooth.
- In a bowl, combine ricotta cheese, melted chocolate, powdered sugar, vanilla extract, and salt.
- Mix until all ingredients are well incorporated.
- Chill the mixture in the refrigerator for about 30 minutes.
- Once chilled, scoop out the mixture and roll it into balls.
- Roll the truffles in cocoa powder to coat.
