Chocolate Coffee Cake

  • ½ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup brewed coffee, cooled
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the cooled coffee, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Fold in the chocolate chips.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow cake to cool before serving.
