Chicken Taco Casserole Recipe (Perfect for taco night!)

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese, cheddar or Mexican blend
  • 1 cup salsa
  • 1/2 cup sour cream
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, and taco seasoning.
  3. Grease a baking dish with olive oil and layer half of the crushed tortilla chips at the bottom.
  4. Spread the chicken mixture over the chips, then add half of the shredded cheese on top.
  5. Layer the remaining chips, salsa, and then the rest of the cheese.
  6. Bake for about 25-30 minutes or until the cheese is bubbly and golden brown.
  7. Let it cool for a few minutes before serving with sour cream.

Notes

  • For added flavor, you can include jalapeños or chopped onions in the chicken mixture.
  • This dish can be made ahead of time and baked when ready to serve.
