Chicken Potato Soup

  • 2 cups cooked chicken, shredded
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and garlic. Sauté until softened.
  2. Add the diced potatoes and sauté for a few more minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
  4. Stir in the shredded chicken, salt, black pepper, thyme, and milk. Cook for another 5 minutes.
