- 2 cups cooked chicken, shredded
- 4 large potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 2 tablespoons olive oil
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and garlic. Sauté until softened.
- Add the diced potatoes and sauté for a few more minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
