Chicken Pot Pie Soup

A warm and hearty chicken pot pie soup that combines flavors of traditional pot pie into a deliciously easy soup.

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 ribs celery, chopped
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 2 cups biscuits (optional, for topping)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sauté until translucent.
  3. Stir in the carrots and celery, cooking for about 5 minutes.
  4. Add the shredded chicken, chicken broth, heavy cream, thyme, salt, and pepper.
  5. Bring to a simmer and cook for 15-20 minutes.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. If using biscuits, bake them as directed on the package.
  8. Serve the soup hot, topped with biscuits if desired.

Notes

  • For added flavor, consider using rotisserie chicken.
  • This soup can be frozen for up to 3 months.
