- 4 medium zucchini
- 1 pound ground chicken
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- Preheat the oven to 375°F (190°C).
- Cut the zucchini in half lengthwise and scoop out the insides to create boats.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add ground chicken and cook until browned. Stir in marinara sauce and Italian seasoning.
- Stuff the zucchini boats with the chicken mixture.
- Top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes or until the zucchini is tender and the cheese is bubbly.
