Chicken Parmesan Stuffed Zucchini Boats

Deliciously cheesy chicken parmesan stuffed in fresh zucchini boats. A healthy twist on a classic dish!

Ingredients

  • 4 medium zucchini
  • 1 pound ground chicken
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add ground chicken and cook until browned. Stir in marinara sauce and Italian seasoning.
  5. Stuff the zucchini boats with the chicken mixture.
  6. Top with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes or until the zucchini is tender and the cheese is bubbly.

Notes

  • For extra flavor, add fresh basil on top before serving.
  • Can substitute ground turkey for a lighter version.
