Chicken Mushroom Soup

  • 1 pound chicken breast, diced
  • 8 ounces mushrooms, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Add the diced chicken and cook until no longer pink.
  3. Stir in the mushrooms, thyme, salt, and pepper; cook for 5 minutes.
  4. Pour in the chicken broth, bring to a simmer, and let cook for 15 minutes.
  5. Reduce heat and stir in the heavy cream; cook until heated through.
