Chicken Farro Soup

This Chicken Farro Soup is a hearty and healthy twist on classic comfort food, perfect for any season.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 pound cooked chicken, shredded
  • 1 cup farro
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots and celery, cook for another 5 minutes.
  3. Stir in shredded chicken, farro, chicken broth, thyme, oregano, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  5. Season with salt and pepper to taste before serving.
