  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • 1 cup diced onions
  • 8 flour tortillas

Instructions

  1. Place the chicken breasts in the crock pot.
  2. Pour the enchilada sauce over the chicken.
  3. Add the black beans, corn, cumin, chili powder, and onions.
  4. Cover and cook on low for 6-8 hours.
  5. Shred the chicken and return it to the pot.
  6. Warm the tortillas and fill them with the chicken mixture, topping with shredded cheese.
