CHICKEN AVOCADO MELT SANDWICH

A delicious chicken avocado melt sandwich, perfect for lunch or a quick dinner.

Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 ripe avocado, mashed
  • 4 slices bread of choice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons mayonnaise
  • 1 teaspoon lime juice
  • Salt to taste
  • Freshly ground pepper to taste

Instructions

  1. In a bowl, combine the shredded chicken, mashed avocado, mayonnaise, lime juice, salt, and pepper.
  2. Spread the mixture evenly over two slices of bread.
  3. Top with shredded cheese and cover with the remaining bread slices.
  4. Preheat a skillet over medium heat and melt a little butter.
  5. Grill the sandwiches until golden brown on both sides and the cheese is melted.
  6. Cut in half and serve warm.
