  • 2 large zucchini
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchini lengthwise into ½-inch thick steaks.
  3. In a bowl, mix olive oil, minced garlic, Italian seasoning, salt, and black pepper.
  4. Brush both sides of the zucchini steaks with the olive oil mixture.
  5. Place the zucchini on a baking sheet lined with parchment paper.
  6. Bake in the oven for 15 minutes.
  7. Remove from the oven and sprinkle mozzarella and Parmesan cheese on top.
  8. Return to the oven and bake for another 10 minutes or until the cheese is melted and bubbly.
