CARROT APPLE & CHIA MUFFINS

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 cup grated carrot
  • 1/2 cup chopped apple
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the honey, applesauce, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the grated carrots, chopped apple, and chia seeds.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
