  • 4 large flour tortillas
  • 6 slices turkey bacon
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 4 large eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  2. In the same skillet, add olive oil, then sauté the onions and bell peppers until softened.
  3. In a bowl, whisk together the eggs, salt, and pepper. Pour the eggs into the skillet and scramble until cooked through.
  4. Add the chopped turkey bacon and cheese to the eggs, stirring to combine.
  5. Place a tortilla in a separate skillet over medium heat. Fill with the egg mixture, fold, and cook until golden brown on both sides.
  6. Repeat with remaining tortillas and filling.
  7. Slice and serve warm.
